In The Kitchen: My Go-To Weekend Meals

We made it to Friday. Yes. Cheers to the weekend. And if you are heading to happy hour after work, please drink responsibly.

But we aren’t talking about drinks today we are talking about cooking at home and maybe you will be inspired (I hope).

Go-To Weekend Meals

Jerk BBQ Wings

Fridays in my house for the last two or so years means its wings night. Here are a few of my fav ways to have wings:

Jerk BBQ wings and it is simple, buy your favourite wings and simply follow the usage instructions on the bottle and season with Grace Jerk Seasoning allow to marinate perferably overnight so do this on Thursday for best results.

I roast my jerk wings in the air fryer but this can be done in the oven or a convection oven or toaster oven. My toaster oven was my favourite small appliance and most used kitchen item before I got an air fryer a few years ago.

I roast my wings for around 30 minutes (please note this isn’t becoming a recipe page just sharing another small piece of me with you). Then I remove from the air fryer and toss in my preferred BBQ sauce then pop them back in the air fryer on the air fry setting for two to three minutes and you will have a delicious sticky and saucy wing that is spicy and sweet.

Veggie Stir Fries

I love a good stir fry and this may be my top Saturday or Sunday dinner option outside of making a pasta dish.

You get to choose your own adventure with this one. So get your fav veggies. I like cabbage, pak choy, sweet peppers and onions and garlic. Get your favourite noodles. Choose a sauce you love and mix it all in. You can top with escallions. Add a protein you like. My go-to are boneless chicken thighs, salmon or shrimp.

You will have a meal in 30 minutes or less.

Pasta

I love pasta but I decided a while back not to order it if I am out. I prefer to make it at home. From spaghetti and meat sauce or meatballs to linguine Alfredo. These are easy dishes that won’t have you in the kitchen for hours.


I am a quick meal type of cook, I like things that are ready in under an hour.
